Bikini Recipe

Serves 10 people

To make the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Premix (makes 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Method

For the Citrus Syrup: Combine the listed components into a pan, bring to a simmer, mixing so the sugar melts. Next, take off the stove allowing it to cool down entirely. Decant into a clean bottle, seal keeping it in the fridge, it will last for about four weeks.

For the Cocktail Base: Mix the specified liquids into one large bottle, leave to sit for an hour, then pass it through best through muslin, so it's fully clarified.

To serve: Add 85ml from the cocktail base into a stirring glass containing ice, and agitate carefully for one minute to chill. Filter to a chilled martini glass or similar, decorate with a few cranberries and finish by giving it a light spray of mandarin oil above the glass.
